From a centenary vineyard, ecological and biodynamic "La Hontanilla" planted in 1901 in Region I of Winkler and Amerine. The grape harvest is carried out by hand in the winery's own vineyard. The juice is left to macerate with its skins for 1 month. The alcoholic and the malolactic fermentation is carried out in clay amphora.
